説Highland 接近雄霸整個蘇格蘭威士忌嘅產業也不為過，大約就是你們說得出來的名牌，很多都是Highland 出產的，在香港流通的有：Ardmore , Dalmore, Dalwhinnie, Deanston, Glenmorangie, Singleton of Glen Ord, Glendronach, Oban, Royal Brackla, Tomatin ⋯⋯相信這些品牌連不太留意威士忌的客人也可能有見過🥃
Btw, Highland Park 反而不是在Highland 區造的hahah ，只不過取其名字😆 菠蘿包冇菠蘿🍍，星加坡又搵唔到星洲炒米😂😂😂 我又講咗去邊
Timorous Beastie 🐭老鼠仔作為Highland 的代表，也算是非常稱職，調和了 Dalmore, Blair Athol, Glen Garioch 同 Glengoyne, 可謂集百家之大成，先來是Signature 的🌼花香、大麥香，中段丁點煙燻🔥、香草、🥜果仁的鹹香味，尾段是蜜糖同奶油味🍨
配🧀芝士係一流嘅，個人覺得仲可以配：

Douglas Laing 的 Timorous Beastie 絕對不適合膽小的人！這種無色、無冷卻過濾的小批量裝瓶是適當陳釀和精選的高地麥芽的結合——其中包括在 Glen Garioch、Dalmore 和 Glengoyne 釀酒廠蒸餾的那些。
最初的 Timorous Beastie，在羅伯特伯恩斯著名的蘇格蘭詩“致老鼠”中永垂不朽，是一隻膽小的田鼠。
呼應我們國家吟遊詩人的智慧，我們的智慧絕對不適合膽小的人！
裡面混合了香草、大麥麥芽、蛋白酥皮、蜂蜜和柑橘的味道……
這是卓越區域麥芽系列的一部分，是蘇格蘭麥芽威士忌產區的終極蒸餾。

充滿甜香草和蜂蜜。

香氣:
起初非常甜美，然後逐漸變成花香、淡大麥和辛辣的蜂蜜味。

口感:
以辛辣的風格開場，帶有葡萄乾的果味和含糖、軟糖的味道。

尾韻:
微妙而甜美，帶有真正的橡木味，帶有淡淡的乳白色穀物和蛋白酥皮的味道。
Douglas Laing's Timorous Beastie is most certainly not for the fainthearted! This non-coloured, non-chill-filtered Small Batch bottling is a marriage of appropriately aged and selected Highland Malts - including, amongst others, those distilled at Glen Garioch, Dalmore and Glengoyne distilleries. 
The original Timorous Beastie, immortalised in Robert Burns’ famous Scots poem “To a Mouse” was a timid, little field mouse. Echoing our national bard’s wit, ours is most certainly not for the fainthearted! Inside there’s a medley of vanilla, malted barley, meringue, honey and citrus flavours just bursting to be unleashed… Part of the Remarkable Regional Malts range, the ultimate distillation of Scotland’s Malt Whisky Regions.

Tasting Notes

FULL OF SWEET VANILLA AND HONEY.

Nose

Overridingly sweet initially, then warming to floral, light barley and spicy honeyed tones.

Palate

Opens in a spicy style with fructiferous notes of raisin and a sugary, fudgey character.

Finish

Subtle yet sweet with a real oaky flavour, hints of milky cereals and late meringue.
